Oven Baked Omelet Muffins

Well! Can you believe it is the first day of June already.  And here in the South the days have already become fairly warm.

Recently, somewhere on the internet, there was a video showing a delicious looking Baked Omelet Muffins Recipe.  I quickly wrote down the recipe, but do not know where I saw this to give credit where credit is due.

One of our grandsons is planning to spend the night tonight and this looked like something he might enjoy for breakfast in the morning ...  So I got busy and made this delicious looking recipe.

Oven Baked Omelet Muffins

This is a quick and easy recipe to put together,  and only takes 30 minutes to bake in the oven.


When they were finished,  I sat down and enjoyed a couple of these delicious muffins
with a nice hot cut of coffee.


Oh! My goodness!  These muffins turned out to be really delicious.  
Served with a little fruit and an English Muffin they would make a very nice company breakfast.

I am including the recipe below just in case you would like to try this recipe:

Oven Baked Omelet Muffins Recipe
·      1 chopped onion
·      Handful of chopped ham
·      Handful of grated Cheddar cheese
·      8 eggs
·      ¼ cup milk
·      ½ teaspoon baking powder

1.    Spray 12 muffin cups with Pam spray to prevent mixture from sticking.
2.    Mix all ingredients together, mix well.
3.    Bake 350 degrees for approximately 30 minutes.
4.    Bake muffins until browned on top.
