In the last Sweet Southern Days post called Tropical South Florida we saw the delicious Banana Muffins our daughter fixed for breakfast during a recent visit. I mentioned that they were so good I would include the recipe in the next post. She found this delicious recipe in the old "The Southern Living Cookbook."
Banana Muffins Recipe
Banana Muffins Recipe
1 3/4 cup all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup sugar
1 1/4 teaspoon cream of tartar
2 eggs, beaten
1/2 cup vegetable oil
2 ripe bananas, mashed
1 3/4 cup all-purpose flour

- Combine first 5 ingredients in a large bowl; make a well in center of mixture.
- Combine remaining ingredients; add to dry mixture, stirring until moistened.
- Spoon batter into greased muffin pans, filling three-fourths full.
- Bake at 400 degrees for 18 minutes or until golden brown.
- Remove from pans immediately.
- Yield: 1 1/2 dozen.
