Lemon Pudding Cake


Day before yesterday was a special family birthday day as our sweet grandson Will turned 14.  How can that possibly be?  You know how that goes ... it was just yesterday it seems that Will was a sweet little one year old doll-baby ... as in the below photo!

We love to celebrate the special day a new family member entered our family,  and the day they took their very first breath on this earth ... What an amazingly special day that is to celebrate!

Our Will loves Lemon Pudding Cake and he also likes Ice-Cream Cake.  Since so many family members would be attending his birthday party and to have enough to go around we decided to have both cakes for his birthday.  Publix, our local neighborhood grocery store makes wonderful Ice-Cream Cakes.  Our daughter, Will's mom, ordered the Ice-Cream Cake,  and I set out to make our very easy Lemon Pudding Cake recipe.

I am including this recipe in case you would like to make this Lemon flavored cake also:

Start out following directions on box of Lemon Cake Mix.


Bake in two 8 or 9 inch cake pans.


Next, you will need to follow directions on box of "Cook and Serve Lemon Pudding Mix."
Cook and cool.


Cut center out of one of the baked and cooled cakes.  I cut about 1 inch deep all around and leave a bit of a border.


Fill hollowed-out cake with the cooked and cooled Lemon Pudding.
(There will be about a cup of Pudding left over.)


Next, we will make the Lemon Icing:
 Start with 4 1/2 cups Powdered Sugar and 1 stick of soft butter.
With electric mixer,  mix extremely well.


Add  I teaspoon each lemon extract and vanilla extract.


Add zest of 1 lemon
and
Juice from the same lemon used for the zest.


Beat all ingredients together until very smooth.


Spread icing on outside edge of cake with the lemon filling.


Place the other cake on top of lemon filled and iced bottom cake.  
Ice the rest of the cake.




I used decorative sprinkles to decorate the cake.




Also available in the baking isle of the grocery are these Happy Birthday decorations
that were added to the cake.


Festive candles were added also.


Ready to celebrate.


Will's Ice-Cream Cake.


Below is birthday boy Will turning 14, his mom, dad, brother Lawson 8, and brother Preston 11.  Brother John Scott missing from the picture because he was attending a summer baseball tournament.


Lemon Pudding Cake Recipe:

Ingredients:
1 box of Lemon Cake Mix
1 box Cook and Serve Lemon Pudding Mix
  • Follow directions on cake mix box, cook and cool.
  • Follow directions on lemon pudding mix box, cook and cool.
  • Hollow-out bottom layer cake and add cooled lemon pudding (there will be about a cup left over.)
Icing:
4 1/2 cups Powdered Sugar
1 stick Butter, melted and cooled
Zest of one lemon
Juice of same lemon
1 teaspoon each lemon and vanilla extract
Dash of salt
Yellow food color (to give a more lemon-look)
  • Mix all ingredients together and beat with electric mixer until very smooth.
  • Spread icing on bottom outside edges of cake that has the lemon filled section.
  • Place other cooked and cooled cake on top of pudding filled cake.
  • Ice the entire cake.
  • Decorate as desired.

The above recipe is a super easy recipe for those who really enjoy lemon flavored cake.  If you decide to make this cake I hope you enjoy it as much as we do.
